## A recipe is part of the equipment Start with a research-tested recipe for the exact product you intend to make. Salt, acidity, time, temperature and ingredient choices can affect safety. A general illustration cannot replace the recipe’s measured instructions. ## Set up a small, observable batch Use clean food-safe equipment and sound produce. Weigh the ingredients and the specified salt. Label the vessel with the recipe, date and measurements so the process can be checked later. ## Follow the process that was tested For fermented cucumber pickles, salt concentration and the prescribed method matter. Do not casually reduce salt or substitute preservation methods. Use the recipe’s directions for submersion, storage and finishing. ## Observe without making promises Bubbles, aroma and colour can help describe a batch, but appearance alone cannot prove food safe. Do not taste a suspect batch to investigate it. Follow the tested recipe’s discard criteria. ## Choose your visual companion Our Kimchi, Fermented Pickles, Tempeh and Miso guides each have their own illustrated sequence. Open the relevant guide, keep the tested recipe nearby and log what actually happened in the Kitchen tracker.
